I've had pretty bad experience with software video stabilisation, causing weird distortion on clouds etc, so generally have avoided it, however I realised at the weekend that the default resampling settings on Sony Movie Studio/Vegas cause all my video to be blurred, and if I fixed this, then using light stabilisation actually really improves the racing footage.

I've done a quick comparison just to show this, this is on Sony software, but I am sure the same would apply to other editing tools, main thing is to check freezing your final video gives clear sharp frames, and secondly dial down the stabilising to much less than the defaults, which seem to be very heavy handed.
